 Amazon(Chachapoyas):   Culture:  The Chachapoyas culture is characterized by the richness of its buildings, many of which are decorated with a system of friezes made of stones arranged on different levels, forming geometric designs in the form of fretwork.  Gastronomy:  Tamalitos:  Its appearance is similar to those of the coast, but they are drier and smaller, barely reaching 7 cm. It consists of corn dough stuffed with meat, wrapped in achira leaves and steamed. Cazuela:  Boil a piece of chicken, a good piece of beef pulp and a piece of mutton. Add cabbage, rice, shelled corn, zahoria and a glass of white wine. Carne Arrolada:  A thin fillet of beef tenderloin, trimmed of fat, is spread on a cooking board and stuffed with fried ground beef, hard boiled eggs, botija olives and onion.
